
I have been making this dip on a weekly basis, it is so good! It is earthy, herby, lemony, and satiating. Serve it with your favorite veggies, and some grain-free crackers for a hearty snack anytime of the day.
Beet & Tahini Dip
- 110 grams of steamed and peeled beets (about 3 small or, 1 large beet)
- 100 grams Culina Plain Coconut Milk Yogurt (or, your favorite thick-style yogurt)
- 75 grams tahini
- Juice of 1 lemon
- a handful of fresh, flat-leaf Parsley
- 2 cloves of garlic
- 1 tsp kosher sea salt, more or less to taste
- 3 cracks of black pepper, or however much you like
Directions:
Blend all the ingredients together with an immersion blender until smooth.

You can steam your own beets, or buy steamed beets from the grocery store. Love Beets and Trader Joe’s are two brands of pre-steamed beets that I really enjoy.
You can use any Greek-style yogurt that you like in this recipe. I prefer Culina Plain Coconut Milk Yogurt because it is most like dairy yogurt in texture and tartness; it also has clean and healthy ingredients. Whatever yogurt you use, make sure it is thick, unflavored, and unsweetened.
