My earliest memories of baking are of me sitting on the counter in my favorite aunt’s kitchen when I was a three-year-old little girl. She would let me sit right next to the big, loud, stand-mixer and pour in the sugar.
I remember being mesmerized by the magical transformation of butter, sugar, flour, and eggs into the tastiest cookies and brownies.
My aunt has since passed away, but the pure joy and excitement of a three-year-old little girl lives on every time I bake.
Baking is about so much more than eating a sweet treat. Baking can cause nostalgia to rise up in us. The smells and the tastes can transport us to earlier times of simple joy in our life. It can refresh cherished memories of our favorite aunt or grandmother. Baking can recenter us in the the beauty of a life well lived.
Baking is also about the joy of gathering with friends, sharing the table with people in our home, and welcoming new neighbors that can become instant friends.
Baking is a wonderful way to spend time with people, create traditions that will live on in our families beyond our years, and a simple and sweet way to let people know you care.
Your love overflows in your baking.
In our current fast-paced culture, we have lost much of the care, welcoming, and hospitality that makes connections between people. We have lost the ability to slow down and sit and laugh with those we love over a sweet treat.
But this way of life can be reclaimed. And I want to help you do exactly that.
Unfortunately there is a growing reality in the world that can be a barrier to this kind of simple beautiful life. Food allergies are on the rise. Everyone knows someone with allergies. And this complicates hosting and hospitality.
Could you imagine going to a party and only being able to drink water? Could you imagine going to a gathering in someone’s home and only being able to eat raw vegetables?
I don’t have to imagine. I have experienced this many times. And it was because of food allergies.
The quintessential American cookie.
A chocolate chip cookie is a basic, but quintessential, American cookie. It is just butter, sugar, eggs, vanilla, flour, baking soda, sea salt, and chocolate. But when you introduce food allergies to this simple cookie, things can go awry in a hurry.
Let’s be honest. Gluten-free and grain-free chocolate chip cookie recipes don’t taste like the real thing. Many of them are as dense and hard as hockey pucks. And if they aren’t hard as pucks, they usually taste sandy.
Sandy and hard, hockey pucks are not the cookies of our childhood.
So, with hopes of reclaiming nostalgia and hospitality for those with food allergies, I set out to make the Perfect Chocolate Chip Cookie.
Each day, for an entire month, I tested and tested my recipe for chocolate chip cookies. I had scientist like precision and only changed one variable each time. I experimented with minute changes with the almond flour, egg yolk, melted butter, softened butter. I studied, experimented, and tested over and over again.
(Oh and I ate a lot of cookies along the way!)
In fact, I ended up making over 1,376 cookies.
Many months later, I was satisfied with my result, and I started sharing the cookies. I shared boxes of my Perfect Chocolate Chip Cookie with friends, family, neighbors, our local farmers, the baristas at our local coffee shops, local business owners — I shared cookies with everyone!
And as I shared, people kept saying the same thing,
“Elisha, this is the PERFECT Chocolate Chip Cookie!”
What is especially amazing is that many of them did not even know this cookie was gluten-free and grain-free.
I have been asked 100 times, where can I get this cookie? Do you have a shop? Will you open a shop?
My answer is, “No I don’t have a shop. But I can do something better. I can teach you to make this cookie at home and you can have them everyday!”
