Agua Fresca, meaning “fresh waters”, is the perfect light and refreshing drink for hot summer days.
Pineapple Agua Fresca
- 1/2 fresh pineapple
- 2 cups (16 oz; 480 grams) water
- 6 Tbsp (120 grams) rich simple syrup
- Juice of 1 lime
- 3/4 tsp flaky salt
Directions:
- Remove the skin and core of the pineapple and cut it into chunks.
- Place all the ingredients in a high powered blender and blend until completely smooth.
- Strain the Agua Fresca through a fine mesh strainer to remove all the pulp.
- Taste and add more simple syrup, lime juice, and salt as desired.
- Serve chilled over ice.
Rich Simple Syrup
- 1/2 (120 grams) water
- 1 cup (200 grams) organic cane sugar
Directions:
- Add the water and sugar to a small pot.
- Stir to dissolve the sugar while heating over medium heat.
- Bring the syrup to a low boil and boil for one minute.
- Remove from the heat. Allow to cool.
- Store in a jar in the fridge for a month.
Test Kitchen Notes:
You can swap the simple syrup for any sweetener you prefer. It may not be a one-to-one ratio so, start with a smaller amount and sweeten to taste.
