The cooked broccoli I ate as a child was just— nasty. Frozen broccoli that was “steamed” to mush and flavorless. Anyone else? Try roasting broccolini and it’s a whole new world!
Roasted Broccolini
- 1 bunch of broccolini (also called baby broccoli)
- Avocado oil or ghee
- Sea salt*
- Pink pepper*
- Garlic powder*
- Juice of one lemon
*Use as much or as little seasoning as suits your taste. I like to just sprinkle it all over the broccolini. If you are not quite sure how much to start with, try 1/2-1 tsp of the sea salt and garlic powder and 1/2 tsp of pink pepper.
- Preheat your oven to 400F. Rinse the broccoli and lay it in a single layer on a baking sheet.
- Drizzle avocado oil or ghee all over the broccoli.
- Squeeze lemon juice over the broccoli. Sprinkle with sea salt, pepper, and garlic powder. (Lay some lemon slices on the broccoli if desired.)
- Roast for 10-15 minutes.
