The weekend forecast is cool and rainy. Time for a warm bowl of chicken soup. Nothing could be easier than my Easiest Chicken Tortilla Soup. It is flavorful, easy, quick, and comforting.
The Easiest Chicken Tortilla Soup
- meat from 1/2 store-bought Rotisserie Chicken, cut into 1 inch pieces
- 1 quart of Chicken Bone Broth
- 1/3 cup Fire Roasted Salsa (or your favorite salsa)
- salt, pepper, onion powder (to taste)
- Siete Grain Free Tortilla Chips
- avocado, cilantro, lime wedges, and jalapeños to garnish
Directions:
- Add the bone broth, chicken, and salsa to a 4-quart pot. Stir to combine. Heat over medium heat until the soup is hot.
- Once the soup is hot, taste and season with sea salt, pepper, and onion powder according to your preference.
- Put a handful of crushed tortilla chips in a soup bowl. Ladle warm soup over the chips. Garnish with avocado, cilantro, and jalapeños as desired.
- Squeeze fresh lime juice over the soup. Enjoy!

This recipe makes 2 large servings of soup. You can easily double or triple the recipe to feed a family.
I prefer to make my own bone broth; it has a richer flavor than the store bought stuff. If you want to save time by buying bone broth, buy a good quality bone broth and add sea salt, pepper, onion powder, and garlic powder to give it more flavor.
Since salsa has tomatoes, onions, garlic, jalapeños, and other seasonings it is a quick way to add a lot of flavor to the soup. Add as much salsa to the soup as you like. 1/3 cup is just a good starting point.
Tortilla chips are a shortcut to make tortilla soup. If you want more authentic tortilla strips, cut a couple of grain free tortillas into matchsticks and fry them in a shallow pan of avocado oil.
