Ten years ago I sat on the floor of Whole Foods and cried.
“What do you mean I can’t eat gluten and dairy anymore?” I felt like I had lost more than the freedom to eat any of the foods I wanted to eat. Food was how I showed people I loved and cared about them. It was how I celebrated. It was how I showed my friends that I enjoyed their company and conversations. Food was first dates, special occasions, a way to make ordinary days special, and so much more. And suddenly I felt that I had lost all those special and meaningful things in my life.
Now that I was diagnosed with Hashimoto’s and food allergies, I didn’t think I would get to enjoy food or life anymore. But, over time, with some work and a little reframing, I began to see the world of possibilities instead of the lack. Cooking delicious, yummy, and allergy free foods became a joy! Now I love the challenge of making gluten-free, dairy-free, healthy versions of foods I used to love so much.

Hi, I’m Elisha! Despite having Hashimoto’s, I have learned how to live a yummy and vibrant life without gluten, grains, or dairy. I live in the Ozarks with my beautiful family. We enjoy good food, kombucha, riding bikes, being outdoors, and going on adventures together.
